No Bake Pumpkin Pie

Thanksgiving is my favorite holiday!
I want to share a recipe that I have made for YEARS. My no-bake pumpkin pie. It disappears so fast and no one knows it is low calorie! I make it every year. See below.
- 1 can pumpkin puree
- 2 small boxes Jello Sugar-free/fat-free pudding mix (vanilla or butterscotch)
- 1 ½ t. Pumpkin pie spice
- 1 can fat free evaporated milk
- Fat Free graham cracker crust (or just put mixture in ramekins and forget the crust)
- Fat free Cool Whip (of course)
Mix puree, pudding mix, spices, milk and pour into the crust. Chill until set. Cut and serve.
⅙ pie =250 calories with cool whip
